Khao Soi is a creamy Thai coconut curry with thick wonton noodles, garnished with deep-fried noodles, shallots, roasted chili oil, and pickled mustard greens. It's a famous dish in northern Thailand!
About our host: Rachel is a cooking instructor at Grandma's Home Cooking School in Thailand. Her school received 5-star reviews from TripAdvisor, and she's welcomed more than 3,000 guests. Her passion for cooking Thai food started when she was a little girl, playing in the kitchen with her grandma. She took the Royal Thai Culinary Course in Bangkok and opened her cooking school in the small, charming Thai village of Saraphi, Chiang Mai.

WHAT YOU'LL NEED Ingredients you need to have:

INGREDIENTS for Khao Soi paste:
• 5 sun dried chilies, remove seed • 1-2 cloves garlic • 1-2 Asian shallots or ¼ red onion • 1 stalk lemongrass • 1 slice galangal • 1-2 slices turmeric or 1/4 tsp turmeric powder • 1 slice kaffir lime zest • 1 tsp masala powder or curry powder • ½ tsp black peppercorns • ½ tsp coriander seeds, toasted • ½ tsp cumin, toasted • A pinch of salt *If you cannot find these ingredients, you can use the ready made Khao Soi curry paste or red curry paste
and add 1 tsp of masala powder.*
INGREDIENTS for Khao Soi curry
• 200g thick wonton noodles or fettuccine pasta • 300ml coconut milk • 200ml chicken stock / vegetable broth (onion, carrot, and daikon) • 200g chicken thigh or wing stick (vegetarian alternative: tofu) • 2 tbs Khao Soi paste • 1 tbs cooking oil • 2 tbs fish sauce (vegetarian alternative: soy sauce) • 2 tsp palm sugar or sugar • ½ tsp salt
INGREDIENTS for Kho Soi condiments
• 300ml-500ml cooking oil for deep frying wonton noodles (depends on the size of the pan) • 100g fresh, think wonton noodles • 1 lime • 1 spring onion • 1 coriander (optional) • 2 tbs cooking for stir frying chili powder (optional) • 1 tbs ground chili or red chili flakes (optional) • 2-3 Asian shallots or ½ red onion (optional) • 100g sour pickled mustard green (optional)
• 1 small pot to cook the noodles • 1 medium size pots to cook curry • Wok or frying pan or small pot to deep fry noodles • Wooden spoon • Tong • Plate and paper towel or a rack to rest the deep fried noodles • Measuring spoons • Knife and cutting board • Stone mortar and pestle for curry past making or food processor
